How hot should steamed milk be? A stretch-and-temperature guide

Steaming milk is two small jobs in order: add a little air, then heat and spin until the milk is glossy and warm. The temperature matters most, because milk tastes sweetest at about 60°C and burnt above about 70°C.

Drag the stretch and temperature sliders to see how a few seconds of air changes latte, flat white and cappuccino milk, and where the sweet spot ends. Includes a step-by-step method and what to look for in a milk frother.
